I have two great food discoveries to share, and since this is neither a food nor diet blog, I’ll just attach them to a happy quote.

Our home has gone low-carb, which means I am missing a lot of foods I love, but this weekend, I made two awesome discoveries.

1.  1/2 cup of almonds ground/chopped in the food processor becomes a grainy powder that perfectly replaces cornmeal on fried catfish.  In fact, it’s even better.  Dip catfish in egg, coat in ground almonds, fry in coconut oil or butter and you have a lovely, very low-carb dish.  Works as well with chicken tenders.  Also works with walnuts or pecans, depending on taste.

2. Kale chips are super easy to make, and replace a desire for potato chips in terms of crunch and flavor.  This morning, I saw some magnificent broad kale leaves at the farmers market.  At home, deveined them (you don’t want the thick stalk in your chips), tossed them in olive oil, laid them out in a pan (took two layers), and lightly dusted with truffle salt and grated parmesan (use whatever seasoning you like, but know that a little goes a looooong way).  Baked at 250F for 45 minutes.  Even my husband thought they were tasty enough.  On the other hand, I have to keep myself from devouring the whole batch.  When they cool, will keep them in tupperware or a baggie.  Something air-tight.

  2. There must be some fascinating relationships between food and happiness, like eating too frequently to try to feel happy (or less unhappy) more often. I should think it over while eating a good meal. 🙂
